I've been reading a lot over lockdown and I was thinking of starting a blog just to practice writing for a bit. I was wondering if you had any advice about how to get going? Like from general advice about making it interesting to technical advice about whether to host it on wordpress or squarespace or something?

Hello! Thank you for your kind words :) I would say go for it. If you are already itching to start writing, what's stopping you? I was in the same position too, so I decided to start a blog when I moved to Canada. All I did was write down the visa process and my thoughts on relocating to Canada - I treated it like it was my journal. I then started writing about interesting things that I got up to - like visiting different waterfalls and going up the CN Tower etc. Eventually, the blog just stuck with me 5 years later and I now use it to write about things that matter to me. Also, how are people responding to your posts? Are they finding an interest? I found that the posts that evoke emotion and have a story telling element, is what people are drawn to. It's something they can relate to - so find something that people can read and think "Yes, I relate to this."
My advice would be: Find a topic/niche you are extremely passionate about and go from there. Readers will find you. Once you know exactly what it is that you want to write about, it'll come naturally to you.
Technical advice: I use Wix for my site. It's really easy to design your template and I have an app on my phone so I can literally edit the posts with ease. It also gives me all the analytics info I need so I can check how many hits I get.
